I’m a mom on a mission! Yet another creation to use up green juice pulp. This one is a warm, cozy and healthy soup. Enjoy!!
I always have these ingredients in my pantry so hence the ingredient list.
All your juice pulp from the day’s juicing…you may want to pick a day where you don’ t use a lot of fruit
3/4 cup light coconut milk
3 cups broth, I used chicken broth
tablespoon full of turmeric, pumpkin pie spice, cumin
half teaspoon full of salt and pepper, cayenne or smoked paprika….go easy on spice
1. add pulp and coconut milk to 3 cups broth, heat until boiling
2. transfer to blender and blend until smooth
3. put back in pot and add spices. I noticed that I needed more flavor so I added a few shakes of cinnamon and cumin. But you should add spices to your liking. I encourage you to taste and add the spices that you like!
4. Ready to serve with pine nuts and dollop of sour cream.
Depending on how much pulp you make, you can get a several cups of soup. I suggest that you only keep it in the fridge for up to 2 days. I just put some portions in Tupperware and froze them so I could have a serving size ready to heat on the stove and eat!
