The art of roasted veggies!

I have to admit that roasted veggies make me giddy! It’s the combo of toasty, uber-healthy, colorful and deliciousness that each fork-full will make my taste buds dance. And in a weird way I feel ever so slightly connected to the earth…I feel at home when I eat roast my veggies. Ok, this got a bit weird 🙂 Here is what I throw together and sprinkle on my choice veggies. Did I mention how much I love spices!!! So many health benefits stacked neatly in your kitchen cabinet.

This might wig some moms out but I don’t measure spices. Just sprinkle out the spices and go for equal parts on each and half as much on the garlic, pepper & sea salt. Lovingly release to need to perfect the recipe and allow yourself to find joy in the art of cooking. Ok ok, if you still need a measurement, go with 1/2 tablespoon of all the spices and 1/4 teaspoon of salt and 1/8 teaspoon pepper and paprika or cayenne. It was the holidays when I took this picture so I had a massive amount and I doubled the sizes (probably)!

And if you can get any fresh herbs chop some up and enjoy the aromatics.

Toss the cut veggies with coconut oil or real olive oil (not all olive oil is 100% olive oil).

Mix all the spices together in a bowl and then dust over veggies in a bowl. Mix away!

Spread out the veggies on a cookie sheet. Bake 350 degrees for about 30 min. Broccoli will cook fastest and hearty veggies like carrots and potatoes will take longer to cook. So check after 30 min to see if you gotta cook longer.
